Green Smoothies
Green smoothies are an excellent way to get all the good-for-you greens in one fell swoop. What is a green smoothie? It’s a blended drink made from water, fresh green vegetables, and fruit. Spices or sweeteners may also be added to flavor the smoothie.
Why drink green smoothies? After all, you can eat green salads every day, right? While eating a large green salad daily is an excellent idea, you can consume even more greens by creating a blended smoothie. Blending greens provides the added benefit of breaking down the rigid plant cell walls and releasing even more nutrients into the smoothie. Chewing can only break down the plant’s fibers so much, and most people don’t chew their greens long enough to reap all the benefits locked into each leaf. By creating blended green smoothies, the blender’s blades act like teeth, chewing up the greens so that all you have to do is sip their deliciousness.
Here’s a really simple recipe for a green smoothie. You can use any home blender or a more powerful unit, such as the Vitamix and Blendtec blenders.
Blend together two cups of dark, leafy greens, one cup of fresh raw fruit, and enough water to mix it up together. If most greens are too strong for your taste, start with green leaf lettuce such as Romaine and work your way up to spinach, kale and chard.

Over time, increase the greens and use fruits that are lower on the glycemic index such as berries or green apples.
